How to make ale

Ale is a drink similar to beer that is prepared using the process of “top fermentation” - that is, using yeast that floats to the surface during fermentation (which is why it is called “top fermentation”). It has been made in England since the beginning of the 7th century. Traditionally, ale is made from malted barley, hops, water and yeast, but now - and especially at home - other grains and flavorings are used.

You will need

Wheat grains – 3 kg;

Water – 10 l;

Honey – 400 g;

Yeast – 0.5 teaspoon;

Raisins – 1 glass;

Sugar – 5 tbsp. spoons

Instructions

Place the wheat grains on a baking sheet or any other large, narrow tray, fill with water and leave until germination (this will take 2 to 3 days, depending on the ambient temperature). Dry the sprouted wheat and pass through a meat grinder.

Place the chopped wheat in a large enamel pan, tank or bucket (with a capacity of at least 15 liters) and fill it with water, which must be passed through a filter. Boil for 2 hours, then remove from heat and leave to cool.

Add honey to the prepared and cooled liquid, stir, cover with a towel and leave for a day at room temperature.

The next day, add washed raisins and yeast to the mixture and leave for another day and a half for primary fermentation.

After this, the drink should be strained several times. Take a large piece of gauze, fold it in half and strain the mixture through it, squeezing the gauze so that the yeast mass remains inside. It can later be used to prepare bread dough. After this, leave the drink for an hour.

After an hour, strain the drink again, this time through a layer of dense fabric made of natural material, also squeezing it out in the process. The yeast remaining after the second straining can be used to make future batches of the drink, but it cannot be stored for long, so if you do not plan to brew the ale again in the near future, it is better to discard it.

Add sugar to the strained mixture and leave the drink to ferment for another 2 days. After this, the ale can be drunk - the result is a weak drink with a slight malt flavor and natural carbon dioxide.

According to modern technology for preparing ale, it is necessary to use hops rather than honey as a flavoring additive. However, hops came into use only in the 12th century, and historically honey or cinnamon or yarrow were used. So honey in this recipe is quite justified.

Ginger ale is one of the most popular types of alcoholic drink today. Highly carbonated with a distinct ginger scent and sweet taste, it will complement any dish. This magnificent drink was invented in the 70s of the 19th century by Dr. Thomas Cantrell, when he was still working in a pharmacy and then specialized in surgery.

Application

Ginger ale can often be found in recipes for treating colds and some viral diseases. If you prepare ginger ale at home (3 days in advance), you can fully experience its benefits. It stimulates blood circulation, helps with indigestion, reduces sore throat and calms cough.

As mentioned above in the story, you can often find this drink on film sets. It is very common in its pure form and not only (meaning an ingredient in alcoholic cocktails). Alcoholic Ginger Ale Recipe

For five liters you will need the following ingredients:

  • ginger root (not pickled; black ginger root will result in a dark ale, while light ginger root will produce a more golden ale with a less pronounced aroma);
  • sugar 300 grams (both white and brown are suitable);
  • lemon 2 pieces (or rather lemon juice);
  • yeast (one teaspoon);
  • water 5 liters (must be boiled).

Equipment

For this process you need few tools, or rather one - a medical dropper. It is necessary in order to participate in the fermentation process, which will be discussed below.

Procedure for preparing the drink

  1. Fresh ginger must be peeled from its hard peel using a knife or grater and grated “pulp” on a fine grater. We also peel and squeeze the juice from the lemons. If the resulting nectar contains pulp or seeds, this is not a problem, since at the end of preparation the drink will need to be strained in any case.
  2. Fill half a glass with warm water and add two tablespoons of sugar and yeast into this glass to check their performance.
  3. Mix the juice of two lemons and grated ginger with the remaining sugar. Then dissolve this mixture in five liters of water (it should be no more than forty degrees, that is, not hot, otherwise the yeast will simply die and the ale will go stale). Add the already tested yeast to the resulting solution. Mix everything.
  4. We make a water seal (needed to let out carbon dioxide and keep oxygen out, thereby preventing the bottle of ale from bursting when it starts to ferment) to do this, take the lid from a five-liter canister and make a hole in it, and then insert the thicker end of the dropper there, from which the syringe was previously removed and the end of the hose was cut off.
  5. Next, to ensure complete impermeability, coat the outer part with plasticine. Check for air passages. Once you are 100% sure that the air is easily passable, take the other end of the dropper and place it in a second bottle of water (the main thing is that the dropper is in the water).
  6. We wait until the fermentation process begins. The system will stand in a dark, cool place with a water seal for two days, after which you can pull it out and close the bottle with a lid. All that remains is to put the ale in the refrigerator for a day.

The drink is ready!

Non-Alcoholic Ginger Ale Recipe

Compound

  • ginger root (150 grams);
  • sugar (4 tablespoons);
  • lemon (3 pieces);
  • sparkling water (3 liters).

Procedure for preparing the drink

  1. Peel the ginger root and grate it. Then mix the resulting slurry with granulated sugar and stir.
  2. Lemons need to be zested and finely grated. Combine lemon with a mixture of sugar and ginger, mix well.
  3. The remaining two lemons need to be placed in a juicer. Pour the resulting nectar with a solution of ginger, sugar and grated lemon.
  4. Pour all the sparkling water into the mixture. Let it brew for 10-15 minutes.

Orange Ginger Ale Recipe

For three liters you will need the following ingredients:

  • sugar (200 grams);
  • yeast (one teaspoon);
  • orange (1 piece);
  • boiled water (3 liters).

Procedure for preparing the drink

  1. Peel the ginger root and grate it on a fine grater. Then place the grated ginger in the bottom of a three-liter jar.
  2. Squeeze the juice from the orange and add it to the ginger along with sugar. Mix.
  3. Pour the resulting mixture with water and mix everything well until the mixture takes on a homogeneous appearance.
  4. Then cover the jar with a rubber glove or a special fermentation lid.
  5. We pour water into the recess so that the contents of the jar are not oxidized by the outside air, but can release the gas produced during fermentation.

  1. Put raisins in a liter jar, add 2 teaspoons of sugar, 1 spoon of grated ginger and the juice of one lemon along with the pulp and mix the ingredients put in the jar together.

  5. The drink is infused for 4 days, after which it can be consumed after cooling it in the refrigerator.

  3. To prepare, use a plastic bottle (2 liters). Glass containers are not suitable; there is a high risk of explosion.
  4. Pour in the mixture. Pour water, leaving 3 centimeters up to the throat. Tighten the plug.
  5. Move the vessel to a dark place for two days. The temperature should be room temperature. The bottle will become dense. Place in the refrigerator for 4 days.
  6. Open carefully. Filter. Pour into containers. You can try after 3 hours. The drink contains 2% alcohol.

With added raisins

Making homemade ginger ale can be alcoholic. This drink can be stored for no more than 1.5 weeks in the refrigerator.

You will need:

  • 210 g peeled ginger root;
  • 4100 ml water;
  • 110 g raisins;
  • 3 medium lemons;
  • 520 g sugar.

How to cook:

  1. Pour a tablespoon of grated ginger and a couple of small spoons of sugar into a liter jar. Pour juice from one lemon and 320 ml of water. Add raisins.
  2. Wrap with gauze in three layers and set aside for three days.
  3. The mixture will ferment. After this, add a tablespoon of grated ginger and two small spoons of sugar every day. Repeat the process for a week.
  4. Boil half a liter of water. Add sugar. Stir and cool to 30 degrees. Pour in the juice from two lemons. Strain.
  5. Pour in the ginger starter and remaining water. Mix. Leave for 4 days.

With orange and honey

The drink is famous for its healing properties. Thanks to its anti-inflammatory properties, it effectively fights colds.

You will need:

  • 150 g sugar;
  • 2 tbsp. spoons of honey;
  • 2 g dry yeast;
  • 2350 ml warm water;
  • 3 tbsp. spoons of grated ginger root;
  • 1 orange.

How to cook:

  1. Squeeze the juice from the orange. Mix with water and strain. Pour in yeast. Mix. Set aside for three hours. Add sugar and pour in honey. Mix.
  2. Set aside for a couple of days. Strain. Pour into bottles. Leave for 2 days.

Non-alcoholic ginger ale

This variation does not require fermentation, so it takes less time to prepare. The result is a fragrant soda with a ginger flavor.

You will need:

  • 7 lemons;
  • 2100 ml plain water;
  • 550 g sugar;
  • 7 cm ginger root;
  • 7 g pepper (corns);
  • 2100 ml mineral water.

How to cook:

  1. Grate the root into a liter of water. Sprinkle pepper. Boil and cook for 6 minutes. Use minimal heat.
  2. You will need:

  • 1100 ml mineral water;
  • 4 teaspoons honey;
  • 55 g ginger root;
  • 1 lemon.

  1. Peel the lemon. Chop the pulp and remove the seeds. Grate the ginger.
  2. Pour honey into ginger shavings. Stir and leave for 17 minutes. Add lemon slices. Mix. Set aside for 7 minutes.
