Original post by Gurry What kind of yeast is needed?How to make ale
Ale is a drink similar to beer that is prepared using the process of “top fermentation” - that is, using yeast that floats to the surface during fermentation (which is why it is called “top fermentation”). It has been made in England since the beginning of the 7th century. Traditionally, ale is made from malted barley, hops, water and yeast, but now - and especially at home - other grains and flavorings are used.
You will need
Wheat grains – 3 kg;
Water – 10 l;
Honey – 400 g;
Yeast – 0.5 teaspoon;
Raisins – 1 glass;
Sugar – 5 tbsp. spoons
Instructions
Place the wheat grains on a baking sheet or any other large, narrow tray, fill with water and leave until germination (this will take 2 to 3 days, depending on the ambient temperature). Dry the sprouted wheat and pass through a meat grinder.
Place the chopped wheat in a large enamel pan, tank or bucket (with a capacity of at least 15 liters) and fill it with water, which must be passed through a filter. Boil for 2 hours, then remove from heat and leave to cool.
Add honey to the prepared and cooled liquid, stir, cover with a towel and leave for a day at room temperature.
The next day, add washed raisins and yeast to the mixture and leave for another day and a half for primary fermentation.
After this, the drink should be strained several times. Take a large piece of gauze, fold it in half and strain the mixture through it, squeezing the gauze so that the yeast mass remains inside. It can later be used to prepare bread dough. After this, leave the drink for an hour.
After an hour, strain the drink again, this time through a layer of dense fabric made of natural material, also squeezing it out in the process. The yeast remaining after the second straining can be used to make future batches of the drink, but it cannot be stored for long, so if you do not plan to brew the ale again in the near future, it is better to discard it.
Add sugar to the strained mixture and leave the drink to ferment for another 2 days. After this, the ale can be drunk - the result is a weak drink with a slight malt flavor and natural carbon dioxide.
note
According to modern technology for preparing ale, it is necessary to use hops rather than honey as a flavoring additive. However, hops came into use only in the 12th century, and historically honey or cinnamon or yarrow were used. So honey in this recipe is quite justified.
Ginger ale is one of the most popular types of alcoholic drink today. Highly carbonated with a distinct ginger scent and sweet taste, it will complement any dish. In terms of strength, it is classified as a low-alcohol drink (from 2 to 5%). It should not be advised or sold to persons who have not yet reached the age of majority, and any health procedures using this drink should not be carried out on children, so as not to cause addiction to alcohol.
The first mentions of ginger ale can be found in the United States of America. This drink is consumed in clear form or as one of the components in strong drinks with strong alcohol, such as vodka, gin or whiskey. Often used during filming as a substitute for beer to keep the cast from getting drunk.
Dark ginger ale has a brownish tint and a strong, pronounced ginger aroma. In contrast to this type, there is a light ginger ale, which is milder in flavor and visually lighter in yellowish hue.
This magnificent drink was invented in the 70s of the 19th century by Dr. Thomas Cantrell, when he was still working in a pharmacy and then specialized in surgery.
Ginger ale can often be found in recipes for treating colds and some viral diseases. If you prepare ginger ale at home (3 days in advance), you can fully experience its benefits. It stimulates blood circulation, helps with indigestion, reduces sore throat and calms cough.
As mentioned above in the story, you can often find this drink on film sets. It is very common in its pure form and not only (meaning an ingredient in alcoholic cocktails). In Russia, this drink can be found from manufacturers Schweppes and Evervess. But it is not so easy to buy it, because due to its low popularity, stores are afraid to put this product on their shelves. Of course, if there is a demand for this drink, it will quickly sell out to all chain hypermarkets. And the growth in popularity among ordinary consumers will not be long in coming.

Rinse the ginger root under cold water and remove excess moisture with a paper towel. Let's grate it on a fine grater. Place the resulting slurry in and add half the prepared water. We will also place black peppercorns there. Bring the water in the pan to a boil, and then reduce the heat to low. Boil the contents of the pan over low heat for another 5-6 minutes. Now you need to pour the resulting broth into a sufficiently large vessel through gauze.
This way the grated ginger root will remain in the gauze. Shake it back into the pan and fill it with the remaining water again. Let's repeat the procedure. Bring the water to a boil and simmer for 5-6 minutes over low heat. Then we will also pour the resulting broth into the first portion.

Non-alcoholic ginger ale in the traditional recipe consists of ginger, sugar and sparkling water. But I took the liberty of adding lemon for freshness and healthiness and changing the recipe a little to simplify preparation.
Wash the fresh ginger and grate it on a fine grater.
Squeeze the juice from the resulting ginger pulp into a saucepan or small saucepan. I usually use a sieve for this.
Wash the lemon thoroughly, remove the peel with a knife, cut into pieces and place in the pan.
Pour the contents with half a liter of cold water.
Bring to a boil and cook over low heat for about 5 minutes. Next, add sugar and, stirring occasionally, continue to cook our ginger ale for about 10 minutes. Strain the finished mixture through cheesecloth or a fine sieve, sifting out the lemon pieces. Cool the syrup, pour into a glass container and place in the refrigerator to cool.
After about an hour, remove the mixture from the refrigerator. Add a glass of sparkling water to a quarter glass of ale. Add ice generously; ginger ale should be cold. Try it! If it's not as sweet as you want, just add more sugar. You can also adjust the ratio of ale and water to suit your taste.
Ginger ale used in pure form or as a component of a cocktail with strong alcohol (vodka, gin, whiskey). By the way, when it’s cold and you want a little warmth, you can dilute it with hot water and drink it instead of tea. Hot ginger ale will warm you up on cold days. The preparation for our ale can be stored in the refrigerator for up to one week. You can directly store it in a jar. Bon appetit!
