Important! The classic kefir cake is made with sour cream, so that’s what I chose to write this recipe. You can use any other one, including custard, just remember that for some types of cream you need to prepare the impregnation in advance so that the cakes do not seem dry when assembled.

Important! You should end up with a fairly thick, pancake-like, smooth dough that comes out of the spoon in one long, heavy stream. If you didn’t manage to achieve this consistency the first time, it doesn’t matter - add a little more kefir or sift a tablespoon of flour, and everything will definitely work out!

A simple kefir cake recipe

Even with extensive culinary experience, you don’t always have the opportunity or desire to bake grandiose masterpieces and multi-tiered cakes. Sometimes you want to cook something simple and unpretentious.

To do this, you will always find a recipe for kefir cake in your notebook. The height of the cakes on this test surprises you every time. They turn out like a sponge cake, but do not require much effort.

Mix cold kefir with soda, leave to stand until bubbles form on the surface. Beat in the eggs, add vanillin, vegetable oil and mix everything well.

When the structure of the kefir dough becomes homogeneous, add the crushed flour a little at a time. Stir and leave for half an hour. We activate the electric oven at 190 °C. Line the mold with parchment. After the dough has rested, pour it out.

You can additionally grease the bottom with butter, so the cake will move away from the mold faster and without effort. Submerge to bake for forty minutes.

You should not look at the baked goods often - the cake may fall due to the entry of cold air into the electric oven. Check for readiness by pressing in the center with a spatula. If the cake is ready, it will return to its original shape. Do not pierce with a toothpick, as is recommended everywhere.

In an iron bowl, combine milk, cocoa, water and three tablespoons of sugar. Stirring constantly, cook the chocolate glaze for five minutes.

Chop the soft butter into pieces and beat into a fluffy mass, add sugar and continue the process. When the cream is ready, set it to cool.

Open the cherries and drain the syrup separately. It is better to use seedless berries.

Remove the cake, cover with a towel and let cool. Divide into three parts, soak in cherry syrup, but not too much, so as not to over-moisten. Scatter the berries randomly on top and coat generously with buttercream. This is how we collect the whole cake. Fill with chocolate glaze and leave to soak.

Kefir dough for the Black Prince cake

The name of this dessert is associated with a long history, which has been interpreted over the years, fiction and gossip have been added, and the truth can no longer be found. But we all tend to believe in fairy tales and princes, and when we eat this dish, we are mentally carried away from reality.

Components:

  • Flour – 500 g;
  • Eggs – 3 pcs.;
  • Sugar – 450 g;
  • Baking powder – 1 package;
  • Kefir – 450 ml;
  • Sour cream – 600 ml;
  • Butter – 200 g;
  • Dark chocolate – 1 pc.;
  • Cocoa – 4 tbsp. l.

Calorie content: 350 Kcal/100 g.

First mix the liquid ingredients: kefir and eggs. Then - dry: crushed baking powder with flour, half the sugar and cocoa. Gradually combine, slowly stirring the whole mass so that the cocoa and flour turn into a homogeneous mass, without dry lumps.

Grease a special silicone mold with oil. Turn on the electric oven in baking mode (185 °C). Pour in the batter and immerse for half an hour.

Using a submersible blender, blend homemade sour cream and sugar, add softened butter and continue the process. Let it cool for half an hour.

Remove the baked goods, immediately turn them over onto a towel and leave to cool. Using a thread, cut into three parts, placing each cake on a plate and coating with sour cream. Sprinkle grated chocolate on top.

Zebra cake with sour milk

A regular kefir cake with added cocoa brings a smile to the face of little sweet tooths. After all, it has unusual monograms, reminiscent of the color of a wild animal - a zebra, for which it received its name.

  • Flour – 350 g;
  • Egg – 2 pcs.;
  • Sugar – 300 g;
  • Cocoa – 4 tbsp. l.;
  • Butter – 300 g;
  • Kefir – 400 ml;
  • Walnuts – 100 g.
  • Baking soda – 1 tsp;
  • Boiled condensed milk – 1 can.

Cooking time: one hour.

Calorie content: 190 Kcal/ 100 g.

Pour soda into warm kefir, mix and leave for twenty minutes. Add one hundred grams of sugar, chilled eggs and crushed flour. Divide the dough in half and pour cocoa into one half and mix vigorously.

Turn on the electric oven at 200 °C. Grease the mold with oil and pour in the dark batter, pour the light batter on top and use a long wooden skewer to randomly draw monograms in the batter. Let it cook for half an hour.

Mix condensed milk with butter, add peeled and lightly chopped nuts. Remove the cake, let it cool and cut it in half with a fillet knife. Generously coat the cake with cream and leave to soak.

It's very easy to cook. Therefore, you can add fruits, jam, nuts or dried fruits to add new notes to the cake you know from childhood.

Chocolate kefir cake

Chocolate baking is simple to prepare; just add cocoa powder to the dough, or better yet, make it yourself. And the chocolate custard cake can be prepared in the evening, and it will soak well overnight.

  • Flour – 600 g;
  • Cocoa beans (or rather their powder) – 50 g;
  • Sugar – 300 g;
  • Sunflower oil – 100 ml;
  • Kefir – 450 ml;
  • Milk – 0.5 l;
  • Butter – 150 g;
  • Starch - 2 tbsp. l;
  • Vanilla – 1 package;
  • Almonds – 100 g;
  • Eggs – 3 pcs.

Cooking time: hour.

Calorie content: 320 Kcal/ 100 g.

Beat two chilled eggs with half the sugar. When a white thick structure appears, add kefir and sunflower oil. Stir, add chopped vanilla and flour in small batches. Grind the beans into powder in an electric coffee grinder. Pour into the dough.

We activate the electric oven at 190 °C. Pour the liquid mass into a baking tray lined with tracing paper and immerse it in baking for forty minutes. The biscuit will triple in size and have a porous, loose structure.

Pour the milk into a small cast iron pot, add cornstarch, vanilla and the remaining egg. Stirring constantly, cook the custard.

When the liquid thickens enough, stop the process and let it cool. Add oil and mix well.

Divide the tall cake into three approximately equal parts, spread with custard, and top with lightly chopped almonds.

Recipe for manna with sour milk

The name of this dessert speaks for itself; the main ingredient of this pastry is semolina. It is prepared with sour cream, natural yogurt or any fermented milk product on hand, including kefir.

Mannik is not as capricious to prepare as a sponge cake and it always works out.

Components:

  • Semolina – 2 glasses;
  • Kefir – 2 glasses;
  • Sugar – 300 g;
  • Cinnamon – 1 package;
  • Eggs – 4 pcs.;
  • Baking soda – 1 tsp;
  • Powder – for sprinkling;
  • Spread – for lubrication.

Cooking time: three hours.

Calorie content – ​​350 Kcal/100 g.

At the first stage, pour the cereal with kefir at room temperature, mix thoroughly and leave for two hours. To make the swelling process faster, you can put the mass on a warm radiator or immerse it in a yogurt maker.

Beat the eggs with vanilla and sugar, add baking soda.

Add the liquid mixture to the kefir-semolina mixture and stir slowly so that the dough has a homogeneous structure.

Turn on the electric oven at 200 °C. We crush the shape with semolina or coat it with oil.

Pour in the dough and bake for half an hour. You can add juice or chopped dried fruits, candied fruits, zest to the base - this is optional.

Remove the manna from the electric oven, transfer it to the prepared dish, cover with a towel and let cool.

Sprinkle powder on top and cut randomly into pieces.

To prepare the cake, it is better to use kefir with the highest percentage of fat content. This way the baked goods will rise better and have a pleasant creamy taste.

The classic version of the Black Prince cake is prepared with jam or jam (usually currant or blackberry jam).

After cooking, the manna can be poured with fruit syrup without removing it from the mold until it is well soaked.
