Anticipation is a joyful, viscous and passionate feeling that excites us especially strongly in winter - in a series of the most beloved holidays of all Slavs, young and old. We invite you to dive into it headlong, looking at the photos and reading the recipes in our article, which describes all kinds of New Year's sandwiches for 2016. We paid careful attention to the beautiful solutions of the buffet menu - in its seemingly simple part... and then it turned out that the culinary imagination truly knows no bounds!

Let's take, for example, the New Year trees among the sandwiches: what are they made of? We will start our story with a simple recipe using always available greens.

We need

  • Black (not Borodino!) bread - 3 slices;
  • Liver pate – 100 g;
  • Dill greens – 1/3 of a medium bunch;
  • Cherry tomatoes – 4-5 pcs.;
  • Cranberries – 10-15 berries;
  • Hard cheese – 1 slice.

How to cook

  1. We cut out three-tiered Christmas trees from pieces of bread.
  2. We coat the workpieces with pate.
  3. Place sprigs of dill on top.

    Use only the soft part of the branches.

  4. We decorate the Christmas trees with New Year's balls: halves of cherry tomatoes, circles cut out of cheese, and cranberries. This is exactly the beauty shown in the photo below.

An alternative decoration can be circles of the most trivial but colorful products: boiled carrots, beets, egg whites, boiled sausage.

Another option is voluminous New Year’s canapés in the form of Christmas trees, the recipes for which can be very varied, but they will always look great.

As you can see in the photo, a salted cracker serves as the basis for the Christmas trees, and the mass for forming the beauties can be chosen from the following recipes.

  • An original appetizer of processed cheese with garlic;
  • Any dense meat or liver pate that can be enriched with sunflower seeds for a piquant taste and greater stability of shape;
  • Curd paste with garlic and nuts, and here again it is important to crush at least half of the nuts not too finely;
  • Rice mass with crab sticks, which is described in detail in the article “New Year's snacks.”

The part of the pine needles in these theatrical canapés for the New Year's table is played by the same dill (in this case, finely chopped!), and the role of snow goes to coconut flakes.

Cook's Advice
You can use any thick sandwich spreads, pates and pastes to form the trees, and instead of crackers use thin croutons or pieces of well-dried bread.

All recipes are equally easy to prepare, so first we will tell you their main principle.

The density (homogeneity) of the mass and flavoring additives are adjusted to taste.

For spreads on sandwiches that include nuts, you can chop them separately if you want the nut pieces to be well felt in the mass. In pastes with sunflower seeds, it is quite possible to leave them whole.

And now about the composition of several unusual pastes for New Year's sandwiches.

Sandwich pastes made from amateur sausage

We will need

  • Sausage “Lyubitelskaya” - 300 g;
  • Cottage cheese, grainy, not sour, homemade – 100 g;
  • Hard cheese (Russian, Pashekhonsky, Dutch) – 1 tbsp;
  • Low-fat cream (10%) – 1-3 tbsp. (depending on the fat content of the cottage cheese);
  • Pepper - to taste.

You can add coarsely chopped nuts - walnuts or almonds. In this case, the pasta should be kept in the refrigerator for at least 3 hours before the start of the meal.

We will need

  • White beans, boiled – 200 g;
  • Onions fried until golden brown - 1.5-2 medium onions;
  • Sunflower seeds – 100-150 g;
  • Salt, pepper, nutmeg - to taste, from 1 pinch;

Keep the pate in the refrigerator for at least 3 hours before serving.

Boiled beet sandwich paste with nuts

We need

  • Boiled beets – 2 pcs. small size;
  • Walnuts, roasted – 100 g;
  • Hard cheese, finely grated – 2 tbsp;
  • Butter, soft – 30 g;
  • Salt, pepper, apple cider vinegar - to taste.

Sandwich paste for the New Year's table

We need

  • Leaves (without thick stems!) of parsley - from about the 1st middle bunch;
  • Walnuts, roasted – 100 g;
  • Cold pressed olive oil – 100 ml;
  • Hard cheese, finely grated – 2-3 tbsp;
  • Zest from 1 lemon;
  • Salt, pepper - to taste.

Carrot spread on sandwiches for the New Year's table

For New Year's spread you will need

  • Raw carrots – 1 pc. medium size;
  • Boiled champignon caps (no more than 10 minutes) – 3-4 pcs.;
  • Butter, soft - 1 tbsp;
  • Hard cheese, grated on a coarse grater – 100 g;
  • Salt, pepper - to taste.

You can add powder from ground dried mushrooms.

Cheese spread for sandwiches with pistachios

Ingredients

  • Processed cheese (fat content from 45%) – 2 pcs.;
  • Finely chopped pistachios – 70 g;
  • Classic mayonnaise, light – 2 tbsp;
  • Butter, soft – 50 g;
  • Garlic – 2-3 medium-sized cloves;
  • Salt, pepper - to taste.

Please note that all the pastes will fit perfectly into multi-tiered New Year's canapés, like the “Pyramid” that we have already made - from Borodino bread with herring paste.

Toasts for the New Year's buffet

We cannot ignore another option for serving sandwich spreads - with crispy crackers or homemade croutons.

Oh, how delicious small triangular or narrow rectangular croutons look on the table for the New Year, fried on both sides in the simplest way - in a hot frying pan with vegetable oil. And a truly festival-style serving will decorate your buffet if the croutons were cooked in a frying pan with a ribbed bottom, which gives them a piquant stripiness.

The wonderful property of such croutons for the buffet table is that they can break out of the strict framework of sandwich serving - without losing their taste. For example, serve some of the spreads described above in small bowls that are placed in the center of a large plate.

Place the croutons on a plate around the bowl. This way, any of the guests, using the crouton like a fork, will be able to choose their favorite pasta. And don’t forget to choose TRANSPARENT bowls for spreading, because it’s not for nothing that they are so colorful. We can’t resist one more non-standard recipe for a New Year’s buffet with dictation of sandwiches.

As you open up happy horizons in 2016, strive upward! - along with puff Christmas trees on a stick (which can easily be replaced with a medical spatula from the pharmacy).

Round, transparent eggs, one to one, on a thin layer of butter spread on a fresh piece of baguette, golden sprats with pickled cucumber and herbs on a fragrant slice of bread... And it’s all about them, about sandwiches, so beloved and always welcome on any table : be it a holiday feast or just a family dinner. And any holiday usually begins with them, when hot dishes have not yet been served, but the guests are no longer averse to enjoying something tasty. Some may think that sandwiches are too simple for the New Year's table and are quite enough on weekdays. However, rest assured, delicious, beautifully decorated sandwiches will look great on your holiday table.

The most common sandwiches for the New Year are, of course, sandwiches with caviar, salmon or sprats. Shouldn't we get creative with their preparation and prepare more original versions, say, sandwiches with tuna or pineapple and chicken? There are a great variety of sandwich options: mini sandwiches, regular sandwiches of various shapes and contents, cold and hot, among which you can easily choose the one that suits the taste of you and your guests. It’s up to you to choose which New Year’s sandwiches will decorate your table, and we will be happy to give you some ideas and hope that they will inspire you to invent your own amazing and delicious sandwiches.

Ingredients:
8 slices wheat bread,
120 g salted salmon fillet,
80 g red caviar,
100 g cottage cheese,
2 tbsp. l. sour cream,
80 g butter,
1 onion,
½ cucumber
½ lemon
1 tbsp. grated horseradish
ground black pepper - to taste,
greenery.

Preparation:
Brush the side surfaces of the bread slices with softened butter and cover them with finely chopped herbs. Spread butter on top of 4 slices of bread. To prepare the curd mass, combine cottage cheese, sour cream, horseradish, pepper and grind. Cover the remaining 4 slices of bread with it and sprinkle finely chopped herbs on top. Place the caviar on pieces of bread, spread with butter, garnish with lemon and herbs. And for pieces with curd mass - salmon slices, cucumber slices, onion rings and greens.

Ingredients:
400 g wheat bread,
200 g lightly salted salmon,
200 g cream cheese,
50 g red caviar,
50 g green onions,
½ tsp. ground black pepper.

Preparation:
Spread the pieces of bread with cream cheese, pepper and place salmon slices on them. Garnish the sandwiches with red caviar and finely chopped green onions.

Ingredients:
4 slices of bread for toasting,
100 g red salted fish,
1 avocado,
1 beet,
¼ lemon
salt, black pepper - to taste,
green onions.

Preparation:
Boil the beets until tender, peel them and cut into very thin slices. Mash the avocado pulp into a puree and add lemon juice, salt and pepper. Cut the fish into thin strips. Dry the pieces of bread a little in the toaster, then spread avocado puree on them, and top with a slice of beetroot and red fish, sprinkle with green onions.

Ingredients:
½ loaf of Borodino bread,
300 g lightly salted salmon bellies,
2 cucumbers,
3 cloves of garlic,
50 g sprat,
2 tbsp. mayonnaise,
2 tsp ketchup,
vegetable oil, lemon juice, lemon, herbs, lettuce.

Preparation:
Cut the bread into slices and fry in a frying pan until golden brown, then place on a napkin. For the sauce, grind 50 g of sprat with mayonnaise and ketchup. Rub the fried bread with garlic and brush with sauce. Cut the cucumbers into slices and place on the bread. Place salmon bellies on top. Garnish the sandwiches with lemon slices and herbs. Place sandwiches on lettuce leaves.

Ingredients:
1 loaf or white bread,
150 g hard cheese,
1 can of pitted olives
2 cloves of garlic,
2-3 tbsp. olive oil,
salt and parsley - to taste,
red caviar and grapes - for decoration.

Preparation:
Grind the olives, garlic, cheese and parsley in a blender to a paste. Add olive oil, salt and stir. Lubricate pieces of loaf or bread with the resulting mixture, and top with red caviar, grapes and herbs.

Ingredients:
10 slices of white bread,
30 g butter,
½ jar of red caviar,
100 g curd cheese,
2 tbsp. chopped greens,
10 small boiled shrimp for decoration.

Preparation:
Cut the bread into slices about 1cm thick. Using a glass or round cutter, cut out circles from the bread and toast them until golden brown in a dry frying pan. Grease the sides of the mini-sandwiches with butter and roll in dill, spread the top with cream cheese, add a little caviar and 1 shrimp.

Ingredients:
1 baguette or loaf,
300 g processed cheese,
3 cloves of garlic,
3 kiwis,
½ lemon
lettuce leaves, mayonnaise.

Preparation:
Place the processed cheese in the freezer for 30 minutes and grate it on a coarse grater. Add garlic and mayonnaise passed through a press to the cheese, just a little so that the mass sticks together. Cut the kiwi and lemon into thin slices, and cut the loaf into slices. Place washed and dried lettuce leaves on the pieces of loaf, then the cheese mixture on them, smooth it out, place kiwi and lemon slices on top.

Ingredients:
4-6 slices of bread,
1 avocado,
1 can of sprat,
1 tomato
1 clove of garlic,
½ tbsp. lemon juice,
½ tsp. lemon zest,
1 tbsp. red wine vinegar,
½ tbsp. chopped greens,
salt, ground black pepper - to taste.

Preparation:
Mix the sprats with parsley, red wine vinegar and lemon zest and leave to marinate. Meanwhile, peel the avocado, cut in half, remove the pit, cut into small cubes and mash with a fork. Add chopped garlic, lemon juice, salt and pepper to the avocado. Lightly fry slices of bread in a frying pan, brush them with avocado puree, top with a slice of tomato, a couple of sprats, garnish with parsley and sprinkle with lemon juice.

Sandwiches with mushrooms

Ingredients:
6 slices of black bread,
100 g butter,
6 tbsp. small pickled mushrooms,
5-6 boiled eggs,
lemon juice, vegetable oil, salt, mustard, parsley - to taste.

Preparation:
Fry the pieces of bread in a frying pan in a small amount of vegetable oil. Cool and brush with butter. Cut the eggs into circles, remove the yolk and chop with a fork. Mix pickled mushrooms with egg yolk, season with salt and mustard. Place protein rings on the sandwiches, place a mound of mushroom mixture in the middle and garnish with parsley.

Sandwiches with cottage cheese and boiled tongue

Ingredients:
10 slices of white bread,
200 g cottage cheese,
200 g boiled tongue,
100 g butter,
greens, salt, pepper - to taste.

Preparation:
Grind the cottage cheese with butter and salt to taste. Lubricate the slices of bread with the prepared mixture and place pieces of boiled tongue on top. Decorate the finished sandwiches with herbs.

Ingredients:
200 g rye bread,
50 g butter,
4 herring fillets,
1 bunch of green onions,
2 tomatoes
mustard, parsley or dill.

Preparation:
Brush the bread slices with butter. Cut the herring fillet into slices, brush with mustard, sprinkle with finely chopped green onions and place on bread. Place a slice of tomato on top and garnish with a sprig of dill or parsley.

Ingredients:
wheat or rye bread,
100 g ham,
100 g cheese,
2 tomatoes
4 radishes,
2 tbsp. butter,
parsley or dill.

Preparation:
Cut the bread into thin slices and cut out circles using a glass or round cutter. Grease the resulting circles with oil and place ham slices cut in the same way on top of them, then a tomato circle, a cheese circle (slightly smaller than the previous circle) and a radish circle. The sandwich should taper towards the top, forming a pyramid. Decorate the resulting pyramids with herbs and secure with a skewer.

Ingredients:
4 slices of rye bread,
150 g cheese,
8 olives,
5 radishes,
2 tbsp. finely chopped green onions,
2 tbsp. butter,
ground red pepper - to taste.

Preparation:
Mash the cheese, add butter, green onions and pepper. Finely chop radishes (4 pcs.) and mix with cheese. Apply the resulting mixture onto the slices of bread. Decorate the finished sandwiches with thin slices of radish and olives.

Ingredients:
White bread,
250 g bacon,
120 g butter,
100 g hard cheese,
2 tomatoes
50 g green salad.

Preparation:
Lightly fry the bread slices. Cut the bacon into thin slices and also lightly fry. Spread each slice of bread with butter, top with bacon, then lettuce and a slice of tomato. Sprinkle grated cheese on top of the tomato slices.

Sandwiches with meat, cheese and pineapple

Ingredients:
8 slices of loaf,
8 slices of boiled meat,
8 slices of hard cheese,
12 pineapple slices,
50 g butter,
1-2 tbsp. ketchup,
a few sprigs of parsley - for decoration.

Preparation:
Dry the loaf slices a little in the toaster, then cool and brush with butter. Place a thin slice of meat, pineapple and cheese on each slice. Bake the sandwiches in the microwave until the cheese begins to melt. Garnish the finished sandwiches with the remaining pineapple slices, ketchup and parsley sprigs.

Ingredients:
slices of white bread,
1 can of canned peas,
1 boiled egg,
1 processed cheese,
2 tbsp. mayonnaise,
2 tbsp. sour cream,
1 tbsp. tomato paste.

Preparation:
Mix mayonnaise with tomato paste and sour cream. Brush the prepared sauce onto the sliced ​​bread and place 1 tbsp on top. salad mixture prepared from a green pot and coarsely grated processed cheese and seasoned with the same sauce. Sprinkle the finished sandwiches with chopped egg.

Ingredients:
1 baguette,
2 cans of tuna,
3 stalks of celery,
2 tomatoes
100 g hard cheese,
mayonnaise, cilantro (or other fresh herbs), salt, pepper - to taste.

Preparation:
Mash the tuna with a fork, finely chop the cilantro and celery. Mix everything, add salt, pepper, season with mayonnaise. Cut the tomatoes into slices. Place the tuna filling on the baguette slices, place tomato slices on top and sprinkle with grated cheese. Place the sandwiches on a baking sheet and bake at 180°C for 15 minutes.

Ingredients:
1 loaf,
1 can of mackerel in oil,
100 g hard cheese,
1 onion,
4 boiled eggs,
3 cloves of garlic,
1 bunch of greens,
mayonnaise, salt, pepper, butter - to taste.

Preparation:
Chop the greens, cut the eggs into cubes, chop the onion finely and fry it in a frying pan until golden brown. Drain the oil from the mackerel, remove the bones and mash with a fork. Mix eggs, herbs, onions, mackerel, chopped garlic, salt, pepper and season with a small amount of mayonnaise (the filling should be viscous, but not liquid). Cut the loaf into thin slices, brush with a little butter and add the filling. Place the prepared sandwiches in an oven preheated to 180°C and bake for 10 minutes. Then sprinkle grated cheese on top and return to the oven for 2-3 minutes.

Ingredients:
1 loaf,
200 g salami
200 g hard cheese,
2 cloves of garlic,
2 tomatoes
a little mayonnaise, salt, ground black pepper and herbs - to taste.

Preparation:
Cut the tomatoes and sausage into small cubes, grate the cheese on a coarse grater. Mix cheese, tomatoes, sausage, chopped garlic and herbs, salt, pepper and add just a little mayonnaise so that the filling fits better on the loaf. Place the sliced ​​loaf on a baking sheet, 1 tbsp on it. mixture onto each piece and, having leveled the mixture over the surface, bake in an oven preheated to 180°C for 15 minutes.

Hot sandwiches with chicken and pickled gherkins

Ingredients:
toast bread,
300 g smoked chicken,
5 pickled gherkins,
200 g processed cheese,
200 g mayonnaise,
ground black pepper and herbs - to taste.

Preparation:
Grate the processed cheese pre-chilled in the freezer on a coarse grater, finely chop the smoked chicken and gherkins, and chop the herbs. Mix all ingredients, pepper and season with mayonnaise. Place the prepared filling on the toast bread and place the sandwiches in an oven preheated to 180°C for 15 minutes. The top of the finished sandwiches can be decorated with a slice of lemon or a slice of tomato.

We are not welcoming our first guests with luxuriously laid tables - snacks and hot dishes will appear a little later, but for now it’s worth “warming up” your friends with delicious small sandwiches. Canapés are convenient because you can put them whole in your mouth without getting your hands dirty. Whether it is worth making slices for the holiday table - decide for yourself. If you plan to start your celebration in the form of a buffet, then let there be plates with ham and fish, don’t forget skewers and forks to make it convenient for the guests. And yet, tartines and canapés are much more convenient - a glass of aperitif in one hand, with the other you take your favorite snack “for one tooth”.

  • French bread – 1 piece
  • Red fish – 250 g
  • Butter -100 g
  • Olives, greens

Cut the bun into thin slices, brush with butter, and place the red fish in a circle. Make tiny “roses” from butter and place in the center of the fish, garnish with a sprig of parsley or dill.

These mini sandwiches need to be made in advance; they are very tasty both hot and cold.

To make sandwiches you will need:

  • French bread – 1 piece
  • Butter – 100 g
  • Garlic – 6 cloves
  • Hard cheese – 300 g
  • Mozerella – 100 g

The loaf is cut into thin slices, each one greased with oil. Peel the garlic and pass through a garlic press or grate on a fine grater. Grate the cheese on a coarse grater. Mix the garlic with oil, you can add a pinch of black pepper - it will turn out a little spicier. If you want to add flavor, finely chop the aromatic herbs and add to the oil. Brush the loaf pieces with the resulting butter and sprinkle with grated cheese. Place in the oven and garnish each sandwich with a thin slice of olive or a sprig of parsley.

  • Chicken eggs – 2 pieces
  • Smoked salmon – 50 g
  • Spinach – 30 g
  • Loaf (French bread) – 4 slices
  • Garlic – 1 clove
  • Vegetable oil – 1 tablespoon
  • Butter – 150 g
  • Red wine vinegar – 1 tablespoon
  • Spices – pepper, salt to taste

Melt the butter, strain and cool. Separate the whites from the yolks, beat the yolks, add oil, pour in wine vinegar and continue beating. Fry the ciabatta bun or pieces of French loaf in a frying pan on both sides. Fry finely chopped spinach with garlic.

Next, the most interesting thing is to boil water, add a few drops of vinegar and salt to it and “twist” clockwise, pour in the protein, then cook for about three minutes. Cool the resulting “spiral” and remove it from the water. Place spinach on the fried bun pieces, salmon pieces on top, protein spirals, pour over the prepared sauce.

Sandwiches with sausages or smoked sausage

Very tasty sandwiches both hot and cold. It is best to make them small so that they fit right into your mouth.

To prepare the snack you will need:

  • Tomato – 1 piece
  • Vienna sausages – 4 pieces
  • Garlic – 3 cloves
  • Parsley
  • Mayonnaise
  • Hard cheese – 100 g

First of all, cut the tomato into small cubes. Chop the sausages in the same way and finely chop the parsley. If you prefer the taste of dill, use it. Mix all the ingredients, add garlic, passed through a garlic press or grated on a fine grater, add mayonnaise (2 tablespoons), mix.

Cut the French roll into thin slices, place the resulting mass on them, sprinkle with finely grated cheese. Place on a baking sheet.

Preheat the oven to 200 degrees, place a baking sheet in it, watch as soon as the cheese has melted - the sandwiches are ready.

Choose the filling for this sandwich according to your taste. You can make both meat and fish filling. The most popular is made from tuna; this is the fish that Italian chefs use.

To prepare the snack you will need:

  • Canned tuna – 300 g
  • Tomatoes – 2 jokes
  • Salad
  • Capers – 5 pieces
  • White bread for sandwiches
  • Mayonnaise - one tablespoon

Cut the crust off the bread, mix canned tuna with mayonnaise. We cook the bread halves separately - put tuna on one, tomatoes on the other. Gently press the caper halves into the tuna. Place lettuce leaves on top of the tuna and place the other half of the bread and tomatoes on top. Leave the finished closed sandwiches in a cold place for a couple of hours. Before serving, cut into neat triangles.

Beautiful sandwiches "Santa Claus"

How to decorate the New Year's table before all the guests have gathered, but it's time to serve the first New Year's snacks for the 2018 meeting?

To prepare the snack you will need:

  • White round buns - half for one sandwich
  • Smoked or salted salmon – 80 g
  • Low-fat cottage cheese – 80 g
  • Soft cheese – 50 g
  • Bulgarian red pepper
  • Cherry tomato – 1 piece
  • Olive – 1 piece
  • Dill - sprig

Why was the round bun chosen - naturally, to depict the face of Santa Claus on it. So you don’t have to tell talented housewives how to “draw” a smiling face with a beard and a red cap on a bun from the ingredients selected in the refrigerator.

We get the flesh color from salmon, the white color from cottage cheese. “We will draw the hat and mouth with pieces of red sweet pepper, the nose will be a cherry tomato, the eyes will be olives, the eyebrows, beard and hair will be dill.

To make the mixture fit easily onto the bun, mix a piece of salmon with cottage cheese using a blender. We cut the Bulgarian cheese either into flat slices or into twigs - how you want to decorate the picture. You can cut out a variety of details from red pepper - a hat, mittens, a mouth.
