  • one large carrot;
  • ground black pepper;
  • a little refined oil;

Cooking process:

Chop vegetables and liver. To make your task easier, you can do this using a meat grinder or food processor.

Add a chicken egg (I also added a yolk), wheat flour and spices (table salt and ground pepper). Mix all ingredients until smooth.

Turn on the kitchen burner to medium heat, pour a small amount of refined oil into the frying pan and heat it up.

Spoon out the liver dough; it turns out quite liquid - this is normal.

Fry the pancakes on both sides until golden brown, approximately two minutes on each side. Do not overcook, otherwise the liver will become hard.

Turn off the heat and place the tortillas on a flat dish. Wash, dry and chop the greens. Sprinkle it over the liver pancakes.

Chicken liver is a healthy, tasty, easily digestible and affordable product. Today we invite you to make pancakes from it that the whole family, and even small children, will appreciate. This dish is easy to make and will be a great addition to any side dish.

Ingredients for pancakes

First of all, you will need chicken liver. Choose it in a store or market very carefully: the product must be fresh, not frozen, and without any unpleasant odors.

Be sure to use onions, as they give the fresh minced liver a pleasant aroma, and to prevent the pancakes from spreading, they usually add a raw egg, flour and semolina.

In addition to salt, add your favorite spices to the minced meat. Traditionally, ground pepper is used: black, white and red, as well as a mixture of them. But many housewives like to use chopped herbs, bay leaves and dried herbs - dill, parsley, basil.

Chicken liver pancakes are not only tasty, but also healthy dish

Vegetable oil (for example, sunflower) is most suitable for frying, but you can also use butter, margarine and even lard. However, in the latter case the dish will turn out to be too fatty. Take this into account if you care about your figure and health.

The amount of ingredients and even the composition of the minced meat may vary depending on the pancake recipe. In some cases, housewives add milk, carrots, rice or buckwheat and other products. We will try to tell you about as many cooking methods as possible.

And you can serve liver pancakes with herbs and any sauce that you like. But the best addition to them is sour cream.

Step-by-step cooking recipes

Let's start with the classic recipe for chicken liver pancakes. For it you will need:

  • 500 g liver;
  • 100 g flour (preferably wheat);
  • 2 chicken eggs;
  • 1 tablespoon of low-fat sour cream;
  • 1 onion;

  2. Beat the eggs into the minced liver and add sour cream. Mix the ingredients thoroughly and start adding flour in small portions, constantly monitoring the consistency of the minced meat: it should be the same as the dough for regular pancakes. After this, add salt and pepper to taste.

    Combine all ingredients and mix

  3. Now start frying. Heat a dry frying pan over a fire, pour in a little oil, and wait until it boils. Spread the pancake batter using a ladle or a tablespoon. It should take no more than 3 minutes to fry the pancakes on each side.

    Fry the pancakes on both sides

Note! The thickness of the pancakes can be whatever you like. But the amount of time for frying depends on it. The main thing is not to dry the product to the point of chips and not to leave the middle half-baked.

This option for making pancakes is great for baby food. This dish is delicious, satisfying, nutritious and light at the same time.

Chicken liver pancakes with semolina

When semolina gets into the minced meat, it swells and increases the volume of the product, which means you will get more pancakes. In addition, they will become fluffy and soft - simply ideal for small children.

Take the following products:

  • chicken liver - 600 g;
  • semolina - 2 tbsp. l.;
  • onions - 1 pc.;
  • flour - 3 tbsp. l.;
  • raw egg - 1 pc.;
  • salt and ground pepper.

We will fry in vegetable oil so that the pancakes are light on the stomach.

  1. Prepare the liver by removing any remaining fat and veins, rinse and dry by placing in a colander or blotting with a towel. After this, grind using a meat grinder, adding the peeled onion.

    Before cooking, the liver must be cleaned of films and residual fat.

  2. Mix everything thoroughly by driving in a chicken egg. At this stage, the minced meat needs to be salted, peppered and semolina added.

    Add semolina

  3. When the dough has become homogeneous, add flour to the required thickness, stirring constantly. For greater convenience, use a fine sieve, sifting flour through it in small portions.
  4. Place the frying pan on the fire and heat the vegetable oil in it. Place the dough in small portions using a tablespoon and press it slightly onto the surface of the pan. The pancakes should be small in diameter so that it is convenient for you to turn them over. Fry on both sides for 3–5 minutes until golden brown.

How to cook liver pancakes from chicken liver with carrots in a frying pan

Short grain rice, rinse and boil until done.

This recipe uses chicken liver, so cool the offal first. Remove ducts and films with a knife. Rinse the liver with running cold water, then cut into pieces.

The liver must be crushed to form a base for the dough. To do this, use a meat grinder or blender. In this case, the dough turns out liquid, and you will need to add a lot of flour.

To make the dough consistency thicker, use a potato masher to crush the liver. This is a rather unusual method, but if you want, try it. Cut off the ducts and films from the liver with a knife. The result is a fairly dense liver mass.

Place the boiled rice in a bowl with the liver mixture.

Grate the carrots on a fine grater, cut a small onion into cubes, and send to the liver.

Tip: liver pancakes with rice and carrots will turn out tastier if you first sauté the vegetables until soft, and only then add them to the liver mass.

Add one spoon of wheat flour and two spoons of semolina into the dough. Now add one small egg and mix everything thoroughly.

Since the dough contains semolina, it needs to sit for 15 minutes. To give the liver pancakes a touch of piquancy, add a finely chopped clove of garlic to the dough, as well as a mixture of peppers. Finally, add a pinch of sugar.

Heat a frying pan with a thick bottom, pour in vegetable oil. Using a tablespoon, scoop out the liver dough and pour it onto the heated surface of the frying pan. The pancakes are fried quickly, about three minutes on each side (over moderate heat).

Transfer the finished pancakes to a plate and let cool slightly.

Place the pancakes beautifully on a plate, garnish the dish with tomato slices, and sprinkle with chopped dill or green onions. The sauce for such pancakes can be either creamy or tomato. Serve buckwheat or mashed potatoes as a side dish.
