Preparation:

  • Rinse the lemon, cut off the zest, and then grate it.

  • Squeeze the juice from half the citrus.

  • Mix the zest with lemon juice and softened butter. You can use a blender.


  • Cut the fish into medium slices.

  • Cut the loaf or bread into round pieces, coat them with creamy mixture.

  • Place salmon and red caviar on top.


  • Decorate the goodies with sprigs of fresh herbs.

Festive sandwiches with salmon and red caviar

Ingredients:

  • loaf – 1 pc.;
  • red caviar – 50 g;
  • lightly salted salmon – 70 g;

Preparation:

Simple and tasty sandwiches with herring


These interesting and moderately spicy snacks will give you and your guests a wonderful mood on New Year's Eve. Treats with herring will make the holiday table appetizing and original.

Ingredients:

  • boiled chicken eggs – 2 pcs.;
  • hard cheese – 30 g;
  • green onions;
  • French mustard – 0.5 tsp;
  • mayonnaise – 1 tbsp;
  • herring fillet – 2 pcs.;
  • lemon – 0.5 pcs.;
  • olives – 10 pcs.;
  • parsley - for decoration;
  • loaf – 6 slices;
  • cucumber – 0.5 pcs.

Preparation:

  • Cut the cucumber into thin slices. Open the jar of olives and drain the juice.

  • Chop the lemons into half rings and remove the seeds. We take out a bowl, add mustard, mayonnaise, and onion, pre-chopped, into it. Add the grated cheese and the egg. Mix well. We chop the herring into large pieces.

  • We cover all the bread slices with spread, make portioned canapés, and cut out any shapes from the base using cutouts.

  • On one side, lay out the fish, and on the other, cucumber, decorate with lemon slices, olives and herbs.

Festive sandwiches with mushrooms and cheese


These snacks are prepared easily and simply from the most common ingredients. But the result is appetizing, tasty, satisfying and beautiful sandwiches that will decorate the New Year's table.

Ingredients:

  • loaf – 12 slices;
  • champignons – 300 g;
  • hard cheese – 200 g;
  • onions – 2 pcs.;
  • garlic – 1 clove;
  • chili pepper – 0.5 pods;
  • green onions;
  • vegetable oil – 4 tbsp;
  • salt - a pinch.

Preparation:

  • Peel the onion and pepper and chop with a sharp knife.

  • Heat a frying pan with oil and fry the prepared two ingredients for 4 minutes. Add frozen champignons to this and sauté until fully cooked for about 15 minutes.

  • Transfer the mixture to a colander to drain off excess oil, and then transfer to a clean plate.

  • Season with garlic and salt.

  • Using an immersion blender, grind the contents for half a minute until you get a paste. Grease the loaf slices with the mixture.

  • Three cheeses, sprinkle over the appetizers, place on a baking sheet, and place in the oven for 10 minutes to melt the cheese.


  • We decorate the treats with herbs and present them to the table on a flat dish.

We paid careful attention to the beautiful solutions of the buffet menu - in its seemingly simple part... and then it turned out that the culinary imagination truly knows no bounds!

Let's take, for example, the New Year trees among the sandwiches: what are they made of? We will start our story with a simple recipe using always available greens.

We need

  • Black (not Borodino!) bread - 3 slices;
  • Liver pate – 100 g;
  • Dill greens – 1/3 of a medium bunch;
  • Cherry tomatoes – 4-5 pcs.;
  • Cranberries – 10-15 berries;
  • Hard cheese – 1 slice.

How to cook

  1. We cut out three-tiered Christmas trees from pieces of bread.
  2. We coat the workpieces with pate.
  3. Place sprigs of dill on top.

    Use only the soft part of the branches.

  4. We decorate the Christmas trees with New Year's balls: halves of cherry tomatoes, circles cut out of cheese, and cranberries. This is exactly the beauty shown in the photo below.

An alternative decoration can be circles of the most trivial but colorful products: boiled carrots, beets, egg whites, boiled sausage.

Another option is voluminous New Year’s canapés in the form of Christmas trees, the recipes for which can be very varied, but they will always look great.

As you can see in the photo, a salted cracker serves as the basis for the Christmas trees, and the mass for forming the beauties can be chosen from the following recipes.

  • Any dense meat or liver pate that can be enriched with sunflower seeds for a piquant taste and greater stability of shape;

We will need

  • Sausage “Lyubitelskaya” - 300 g;
  • Cottage cheese, grainy, not sour, homemade – 100 g;
  • Hard cheese (Russian, Pashekhonsky, Dutch) – 1 tbsp;
  • Low-fat cream (10%) – 1-3 tbsp. (depending on the fat content of the cottage cheese);
  • Pepper - to taste.

You can add coarsely chopped nuts - walnuts or almonds. In this case, the pasta should be kept in the refrigerator for at least 3 hours before the start of the meal.

We will need

  • White beans, boiled – 200 g;
  • Onions fried until golden brown – 1.5-2 medium onions;
  • Sunflower seeds – 100-150 g;
  • Salt, pepper, nutmeg - to taste, from 1 pinch;

Keep the pate in the refrigerator for at least 3 hours before serving.

Boiled beet sandwich paste with nuts

We need

  • Boiled beets – 2 pcs. small size;
  • Walnuts, roasted – 100 g;
  • Hard cheese, finely grated – 2 tbsp;
  • Butter, soft – 30 g;
  • Salt, pepper, apple cider vinegar - to taste.

Sandwich paste for the New Year's table

We need

  • Leaves (without thick stems!) of parsley - from about the 1st middle bunch;
  • Walnuts, roasted – 100 g;
  • Cold pressed olive oil – 100 ml;
  • Hard cheese, finely grated – 2-3 tbsp;
  • Zest from 1 lemon;
  • Salt, pepper - to taste.

Carrot spread on sandwiches for the New Year's table

For New Year's spread you will need

  • Raw carrots – 1 pc. medium size;
  • Boiled champignon caps (no more than 10 minutes) – 3-4 pcs.;
  • Butter, soft - 1 tbsp;
  • Hard cheese, grated on a coarse grater – 100 g;
  • Salt, pepper - to taste.

You can add powder from ground dried mushrooms.

Cheese spread on sandwiches with pistachios

Ingredients

  • Processed cheese (fat content from 45%) – 2 pcs.;
  • Finely chopped pistachios – 70 g;
  • Classic mayonnaise, light – 2 tbsp;
  • Butter, soft – 50 g;
  • Garlic – 2-3 medium-sized cloves;
  • Salt, pepper - to taste.

We cannot ignore another option for serving sandwich spreads - with crispy crackers or homemade croutons.

Oh, how delicious small triangular or narrow rectangular croutons look on the table for the New Year, fried on both sides in the simplest way - in a hot frying pan with vegetable oil. And a truly festival-style serving will decorate your buffet if the croutons were cooked in a frying pan with a ribbed bottom, which gives them a piquant stripiness.

Cut small square or round toasts from white bread and fry them in butter. Boil and peel the shrimp. Mix cream cheese with chopped herbs. Using a pastry syringe, apply a rosette of cheese onto the toast, place the caviar and place the shrimp upside down.

Canapes with caviar and egg

Ingredients:
1 jar of red caviar,
3-4 eggs,
100 g butter,
greens - for decoration,
White bread.

Preparation:
Boil the eggs and cut into slices. Cut the bread into small pieces of toast the size of the eggs and dry them. 1 tbsp. Rub the caviar through a sieve and mix with softened butter. Place the egg slices on the toast, lay out the caviar in a heap and use a cornet to plant small rosettes from the butter. Decorate with greens.

Ingredients:
200 g boiled shrimp,
24 boiled small shrimps,
50 g soft processed cheese,
1 tbsp. horseradish
6 olives or olives,

100 g butter,
5 boiled eggs,
1 tbsp. chopped greens,
black bread.

Preparation:
Cut the bread into squares and toast. Cut the salmon into the same squares. Separate the whites from the yolks, grind the yolks with half the amount of soft butter, grate the whites on a fine grater and combine with the remaining butter. Spread butter with egg whites on pieces of bread, place salmon and decorate with balls of butter and yolks. Sprinkle with herbs.



Ingredients:

250 g salmon,
50 g butter,
1 avocado,
50 g hard cheese,
1 lemon,
ground black pepper, herbs - to taste.

Preparation:
Peel and cut the avocado into slices, sprinkle with lemon juice. Cut the rye bread into slices and fry in oil. Place salmon and avocado slices on bread, sprinkle with pepper and garnish with herbs.

Sandwiches with boiled chicken and cranberry sauce

Ingredients:
250 g boiled chicken fillet,
½ cup mayonnaise,
1/3 cup frozen cranberries,
2 tbsp. chopped walnuts,
salt, pepper, white bread, salad.

Preparation:
Rub the cranberries through a sieve, mix with mayonnaise and chopped walnuts. Add salt and pepper to taste. Cut the bread into squares and toast in a toaster or fry in oil. Cut the chicken fillet to the size of the toast. Spread cranberry sauce on toast, add chicken fillet and garnish with lettuce leaves.

Ingredients:
300 g hard cheese,
250 g cottage cheese,
1 can of sprat,
50 g butter,
5-6 pickled gherkins,
½ lemon
½ bunch of greens.

Preparation:
Cut the cheese into thin squares with a side of 2-3 cm. Mash the sprats with a fork, combine with cottage cheese and butter and beat with a blender. Spread half of the cheese squares with the mixture and cover with the remaining cheese. Place thin slices of gherkins, lemon slices and herbs on top of the canapes.

Ingredients:
5-6 pieces of kiwi,
200 g cheese,
3-4 tbsp. mayonnaise,
3-4 cloves of garlic,
1 bunch of greens,
White bread.

Preparation:
Cut the bread into slices and fry in oil. Grate the cheese on a fine grater, add mayonnaise, chopped herbs and garlic and mix. Spread the resulting mixture onto the bread and place a kiwi slice on top. Garnish with a leaf of greenery.

Sandwiches with eggs

Ingredients:
4 boiled eggs,
200 g salted sprat,
lemon, herbs, olives or black olives - for decoration,
black bread.

Preparation:

Cut boiled eggs into slices 0.5 cm thick. Cut black bread into squares the size of egg slices and dry in the oven or fry in oil. Clean the sprat and divide it into fillets. Place a rolled sprat on each egg slice and place an olive, a slice of lemon or herbs in the center for decoration.

Canapés on skewers. Prepared from products cut into cubes of the same size. Olives, grapes, small meatballs and cherry tomatoes are pricked whole.

Canapes with egg and sprat

200 g ham,

Preparation:

Cut all products, except cherry tomatoes, into circles or squares using cookie cutters. Cut the tomatoes in half. Make pyramids: bread, butter, ham, radish, cheese, tomato. If you decide to make a square pyramid, lay the pieces, shifting them relative to each other by 90°. Secure with a skewer.

Ingredients:
1 chicken fillet,
5 boiled eggs,
3 pickled cucumbers,
6 tomatoes
24 olives,
butter,
salt, pepper - to taste.

Preparation:
Boil the chicken fillet, chop, mix with butter and beat with a blender. Cut the cucumbers into small cubes and mix with the pate. Cut the eggs and tomatoes into slices, cut the olives in half. Grease crackers with pate, add egg, tomato, half an olive and garnish with herbs.

Ingredients:
300 g fish,
1 onion,
½ parsley root
1 carrot,
30 g gelatin,
2 boiled eggs,
black peppercorns, bay leaf,
black bread.

Preparation:

Cut the fish into small pieces and cook with the addition of spices and roots. Strain the broth and mix with the swollen gelatin, heat until dissolved. Pour a thin layer of jelly into small molds, let it harden, then put in the fish, carrot decorations, egg whites and herbs, pour in the jelly and let it harden. Cut slices of bread to fit the molds with aspic. Spread the frozen jelly onto the bread and serve on lettuce leaves.

200 g boiled tongue,
100 g boiled beef,
100 g butter,
50 g mayonnaise,
50 g mustard,
White bread.

Preparation:

Cut the bread into squares and brush them with oil mixed with mustard. Finely chop the tongue, cut the beef into thin slices. Place tongue on each slice, slices of beef on top, pour mayonnaise and garnish with herbs.



Ingredients:

150 g butter,
1 onion,
1 bunch of chopped herbs (dill, parsley, marjoram, tarragon, basil),
1 sweet green pepper.

Preparation:
Chop the greens as finely as possible. Beat the butter and mix with the herbs. Cut the pepper into cubes. Use a pastry syringe to pipe green cream onto crackers or pieces of white bread and place a cube of pepper on top. The butter in this recipe can be replaced with soft cream cheese.

In almost any store you can now buy ready-made tartlets of any shape and size. This makes life very easy for the housewife, because she doesn’t have to spend half a day fiddling with the dough. Fill them with any filling and don’t forget to decorate - and now the miniature snacks are ready.

Ingredients:
1 can of cod liver,
50 g champignons,
1 tbsp. mayonnaise,
greens - for decoration,
tartlets.

Preparation:
Strain the cod liver from the oil and mash with mayonnaise. Chop the champignons very finely and fry in vegetable oil. Mix the liver and mushrooms and pipet them into the prepared tartlets using a pastry syringe. Decorate with greens.

1 jar of red caviar,
5 boiled eggs,
mayonnaise,
ground red pepper - to taste,
greens for decoration,
tartlets.

Preparation:
Grate the eggs on a coarse grater. Mix mayonnaise with red pepper and combine with eggs. Fill the tartlets with the egg mixture and place red caviar on top of it. Decorate with green leaves.

1 fillet of salted herring,
3 boiled eggs,
50 g butter,
2 pickled cucumbers,
lemon, greens - for decoration,
tartlets.

Preparation:

Pass the herring fillet through a meat grinder and mix with half the amount of butter and grated egg whites. Grind the yolks with the remaining butter and roll into small balls according to the number of tartlets. Cut the cucumbers into thin slices, lemons into thin slices. Fill the tartlets with the herring mixture, place a circle of cucumber and a slice of lemon, place a ball of yolk and a leaf of greenery.

Roll sandwiches for the New Year's table are also quite simple to prepare, but look very elegant.



Ingredients:

150 g smoked meat,
100 g smoked sausage,
100 g cheese,
150 g butter,
1 sweet yellow pepper,
1 sweet green pepper,
2 tomatoes
3 boiled eggs,
mustard, horseradish, salt - to taste.

Preparation:

Cut the baguette lengthwise and remove the crumb. Cut smoked meats, eggs, hard cheese, peppers and tomatoes into small cubes. Grind the butter with mustard and horseradish, add salt and add baguette crumb (if necessary). Fill the baguette with the minced meat, wrap it in cling film and put it in the refrigerator. Cut into slices before serving. Decorate with greens.
