Freezing split peas that are slightly overripe


When we collect the last pea harvest from the garden, as a rule, it is already a little overripe.   1. If you need to freeze a large batch of peas, it is better to find helpers, or do the freezing in parts. The fact is that with prolonged contact with air, the grains harden quite quickly, as their skin becomes coarser. If there are no helpers, you should peel the peas in small parts, blanch, pack, and only then move on to the next batch.
  2. Pea pods should not be dried for too long; they dry out quickly.
  3. Before blanching the peas, place a container of cold water and ice cubes near a pan of boiling water. After the peas are ready, they must be quickly immersed in ice water, so they will not be overcooked.
  4. The blanching process should not exceed three minutes.
  5. Each package or any container with a frozen product must be signed, indicating the date of freezing.
  6. The maximum shelf life of frozen peas is one year.
  7. If you plan to prepare some kind of dish from harvested peas, you should not defrost it. You just need to pour out the required amount from the freezer and immediately add it to the pot or pan.
